A scrumptious pie crust filled with potatoes, bell pepper, jalapeno, eggs, cheese, and finished off with maple syrup brushed bacon!
This pie has all the best breakfast flavors in one slice and makes it so hard to have just one piece. It has quickly become a family favorite and something I like to make for weekends or holidays. It is great when you will be having weekend guests or just a lot of people to feed. I am lucky to live close to the ocean and mountains here in the PNW. So I will often make 2 pies in preparation for trips to the coast or camping. My family likes to book vacation rentals and spend time on the sand or in the woods and this is such a great dish to pack and have ready in the morning. I do cook ahead when I do this and just have it ready to reheat. Makes it so simple.
Just look how mouthwatering it is!
I love making a bacon lattice on top to seal all the goodness in. We bake for 45 minutes and then serve on up.
A few things before we begin…
Crust – You can make one from scratch or buy from the grocery store. Make sure you poke the crust with a fork all around to vent while cooking and prebake for 5 minutes before filling.
Cheese – Any of your favorite cheese will work but I like to use a mild cheddar and smoked mozzarella. A fontina or pepper jack works great too.
Fillings – Now this part is great because you can put anything you like but I do recommend potatoes, and a vegetable. I love bell peppers and sometimes ham too.
Okay let’s get started.
Bacon Breakfast Pie
Equipment
- pie pan 9" or 10" pan
Ingredients
- 1 pie crust
- 1/2 bell pepper, chopped small green or yellow
- 1/2 jalapeno, minced
- 2 medium russet potatoes, peeled, sliced thin
- 1 green onion, sliced thin
- 1 cup med cheddar cheese, shredded
- 1/4 cup smoked mozzarella or any other cheese you like
- 8 eggs
- 1/4 cup milk
- 10 strips of thin bacon
- 1/4 cup maple syrup
- salt and pepper
Instructions
- Preheat the oven to 425°
- Put the pie crust into the pan and trim around the edges. Poke the crust with a fork all around the bottom and to the sides. Bake for 5 minutes and then set aside.
- Next step is to arrange the potato slices around the pan. Slightly overlap them.
- Now evenly sprinkle the bell pepper and jalapeno on top of the potatoes.
- Sprinkle on half the cheese
- Whisk the eggs and milk in a small bowl. Season with salt and pepper then pour into the pie dish.
- Next sprinkle the remaining cheese and then top with the green onions.
- Moving on to the bacon. Start with 5 strips across the pie pan and then weave the remaining 5 to create a basket weave pattern.
- Before we brush with syrup, cover the edges of the dish/bacon with aluminum foil. Then brush the bacon with maple syrup.
- Bake for 40 minutes and then carefully remove the foil. Bake for an additional 5-10 more minutes until the bacon is golden and crispy.
- Let it cool slightly then cut into slices. I love a good few shakes of hot sauce on mine.
