A fun way to serve breakfast!Â
Breakfast is my favorite meal of the day, and I am always thinking of new ways to present it to my family. Today I had store-bought flatbread on hand and a lightbulb moment hit! I had a mix of fresh ingredients and the classic breakfast items like bacon and eggs. The best part of this recipe is that it’s versatile and you can use anything you have available. I do think biscuits and gravy flatbread would be phenomenal. That will be my next adventure. Stay tuned for the recipe! Â
Doesn’t that look delicious? I started by making some bacon in the air fryer. This is my favorite way to cook it as it yields perfectly crunchy bacon every time without the greasy mess. Â
BaconÂ
- Cut 4-5 strips in half and lay in the air fryer basket, barely touching. Â
- Cook on air fry setting, temperature set to 360° for 12 minutes. Â
EggsÂ
- Scramble 6 eggs in a nonstick pan with a bit of butter or avocado oil. Â
- Cook until fluffy. Â
- Season with salt, pepper, and paprika. Â
Ingredients:
Makes 2 pizzas
- Â Flat bread I buy them in a 2 pack
- 4-5 strips bacon cooked, chopped Â
- 6 eggs, scrambled
- 1 avocado, diced. Â
- ½ cup Mozzarella cheese, shredded Â
- 1 tbsp. Fresh cilantro, chopped
- 1 tbsp. Fresh parsley, chopped
- Extra virgin olive oil Â
- Hot sauce (I love verde for this recipe)
AssemblyÂ
- Preheat the oven to 400°.
- Lay the flatbread on a baking sheet and drizzle with olive oil. Â
- Now sprinkle the cheese evenly on both flatbreads Â
- Bake for 10 minutes or until the cheese is melted. Â
- Remove from the oven and start with toppings. Â
- First goes the eggs, bacon, diced avocado, and then tomatoes. Â
- Finish with the fresh herbs and hot sauce.
