Ingredients

  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp paprika
  • ½ tsp garlic powder
  • 2 Potatoes (diced)
  • ¼ Onion (chopped)
  • 6 Eggs
  • 1 cup Cottage cheese
  • 1 cup Cheddar cheese (shredded)
  • 2 tbs chives, minced
  • 1 tsp dill, minced
  • ¼ cup Ham (diced)
  • Oil or butter (for cooking)

Instructions

  1. Preheat oven to 350 degrees. Grease a square muffin pan or a regular muffin pan to prevent sticking.
  2. In a skillet, cook the potatoes and onion in a little oil or butter over medium heat. Season with salt and pepper and sauté until soft and starting to brown for great flavor.
  3. In a large bowl, whisk the eggs. Add cottage cheese, cheddar cheese, add dill and chives for that Starbucks-inspired twist, diced ham, and all seasonings (paprika, garlic powder, salt, and pepper). Mix until well combined.
