Berry Salad with Maple-Balsamic Dressing

A light and refreshing salad that is bursting with so many summer flavors!

We start with a homemade dressing that has herbs de Provence, (I like herbs de Provence with lavender) garlic, lemon juice, lemon zest, balsamic vinegar, maple syrup, and olive oil. We will mix it up and refrigerate until ready to toss in the salad.

The salad greens can be a mix of many things, but I love to use a spring mix with spinach. We then toss in fresh torn basil, strawberries, blueberries, some cubed mozzarella cheese, and pistachios. It is a delicious addition to any summer BBQ table. It also stores well and can be made in large quantities.

Look how beautiful it is! It never lasts long at my house and whenever I have served it to guests I’m always asked for my recipe. I tell you; the dressing is my favorite part and I absolutely love to keep it on hand during Summer.

Balsamic-Maple Berry Salad

A beautiful and refreshing salad that makes a great addition to any meal. I love to serve it with grilled chicken or pork. Spring mix with strawberries, blueberries, basil, mozzarella, and pistachios. All tossed together with an amazing dressing.

Ingredients

Dressing

  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1/2 lemon, juiced.
  • 1/2 tbsp. lemon zest
  • 1 tsp herbs de Provence.
  • 1 garlic clove, minced.
  • 2 tbsp. maple syrup
  • salt and pepper

Salad

  • 6-8 cups salad- spring mix with spinach
  • 1/4 cup fresh torn basil
  • 1/2 cup fresh blueberries
  • 1 cup fresh strawberries, quartered.
  • 1/4 cup cubed mozzarella cheese
  • 1/4 cup pistachios, chopped

Instructions

Dressing

  • In a mason jar or mixing bowl, add olive oil, balsamic vinegar, lemon, lemon zest, garlic, maple syrup, herbs de Provence, and salt/pepper.
  • Mix well and set aside or in the refrigerator until time to serve.

Salad

  • To assemble: In a bowl layer the spring mix and torn basil leaves.
    Add the cubed cheese, strawberries, blueberries, and pistachios.

  • Pour on the dressing and serve.
