Apple-Sausage Thanksgiving Stuffing Balls

I love stuffing! It could possibly be my favorite part of thanksgiving … but its impossible to choose a favorite because its all so good.

I know there is the never ending debate whether to stuff the bird or not but I personally am not a fan. In fact i’m not a fan of ooey gooey stuffing either. The crust on top of a casserole dish is the best part but then as you dig in deeper, closer to the bottom it all becomes a mushy mess. EWW!

So here I bring the Game Changer!

The perfect stuffing with the perfect execution. These are crunchy, moist inside, not dry, not gooey but absolutely perfect. I swear the family will keep coming back for the perfect little balls of love!

Apple-Sausage Thanksgiving Stuffing Balls

Ingredients

  • 1 cup raisins
  • 1 1/2 cups orange juice
  • 2 cups celery, chopped
  • 1 large yellow or white onion, chopped
  • 1 cup butter, divided
  • 1 pound mild bulk Italian sausage can be found in the by the sausage links in the grocery store
  • 1 16 ounce  package crushed herb-seasoned stuffing  (stove top works fine)
  • 4 medium granny smith apples, peeled and chopped
  • 1 cup pecans, chopped
  • 2 cups turkey or chicken broth
  • 2 tsp dried thyme
  • 2-3 tsp pepper

Instructions

  • Preheat the oven to 350°
  • Line 2 baking sheet pans with parchment paper, set aside
  • In a saucepan, bring raisins and 1 cup orange juice to a boil. Remove from the heat; set aside (do not drain)
  • In a skillet, saute celery and onion in 1/2 cup butter until tender. About 5 minutes. Transfer to a large bowl.
  • In the same skillet, cook sausage over medium heat until no longer pink; drain.
  • Add sausage, stuffing, apples, pecans, remaining orange juice and remaining butter to the large bowl. Stir.
  • Next to the large bowl is the 2 cups of broth, thyme and pepper. Stir.
  • Lastly pour the herb package stuffing in and mix.
  • Using a ice cream scoop a heaping amount and roll into a ball. You may need to keep a small dish of water handy to dip your fingers into occasionally to keep the balls rolling well.
  • Place the balls on the baking sheets and bake about 20 minutes or until lightly browned. Refrigerate any leftovers.
