The flavors of Fall are wrapped in a delicious crepe, filled with homemade whipped cream, and topped with warm soft apples in delectable sauce.
Crepes are a French treat that we love in my family. We love them for breakfast or dessert. These apple pie crepes are the BEST way to enjoy all the glory of Autmn. The sauce is made with green apples, brown sugar, butter, Cinnamon, nutmeg, all spice, pumpkin pie spice, lemon juice, and a pinch of salt.

Apple Pie Crepes
Super easy crepe recipe with an amazing apple filling that will remind you of a Fall days pie.

Equipment

Ingredients
Crepes
- 1 cup flour
- 1 1/4 cup milk
- 3 eggs
- 2 tbsp sugar
- 2 tbsp butter
- 2 tbsp lemon juice
- 1/2 tsp salt
Apple Pie Filling
- 4 granny smith apples, peeled and chopping to bite size pieces.
- 3 tsp lemon juice
- 1/2 cup water
- 3 tbsp butter
- 1/4 cup light brown sugar
- 1 tsp cinnamon
- 1/4 tsp ground allspice
- 1/4 tsp nutmeg
- 1/4 tsp pumpkin pie spice or apple pie spice
- 1 pinch of salt
Wipped cream
- 2 cups heavy cream
- 2 tsp sugar
Instructions
Whipped Cream
- In a standing mixer or using a hand mixer- add 2 cups of heavy cream and 2 tsp of sugar. Blend on high using the whisk attachment. Until the cream turns into stiff peaks/whipped cream. Store in the refrigerator until ready to use.
Crepes
- In a blender, add all the crepe ingredients. Blend till smooth. Cover and let rest for 20 minutes. While the crepe batter rests you can start the filling.
- The crepes are simple to cook as soon as you get a good technique down. It may take a couple of tries to get the right timing and thickness but after that it goes quickly and before you know it, you will be a pro! Essentially, they are like thin pancakes butwith a smooth batter, and the 1st one is always a throw away. (Or eat- away)I found the perfect temperature on med heat in a nonstickpan. Or a crepe pan! Link to my favorite in the post above. Give a quick brush butter on the pan and add 1/4 cup of batter or less Quickly lift the pan and swirl to the edges, making a circle.
- Cook for about 40 seconds. You will start to see the middle bubble and the edges start to brown. Take a rubber spatula and lift the edge. If it lifts easy,time to flip. Cook the other side for 30-40 seconds more. It gets easier with practice.
- Stack all the crepes on a plate and cover with foil while cooking the rest. You can also keep them warm in the oven on the lowest setting wrapped in foil. Don't keep them in for long.
Apple Pie filling
- In a saucepan add the butter on medium heat. Melt then add the apples. Cook for 2 minutes then add the lemon juice.
- Let the apples sweat out the liquid and cook for 4-5 minutes while stiring occasionally. Now add the brown sugar, stir. Add all the spices and pinch of salt.
- Stir well and add the water. Cook for minutes more until the sauce starts to thicken. Turn to low. If you need add more water do a tablespoon at a time. It should be thick. The apples should be soft with a bit of crisp.
Assembly
- To fill, simply spread some cream on one end.
- You can roll them up or fold. I like to fold in half then into a triangle. Plate 1-2 and then scoop the apple filling over the crepes. ENJOY!
