Air fryer Sweet Honey Mustard Chicken

I am forever experimenting and trying out recipes for the air fryer and this one came to me as I was craving chicken strips. You know the bar style fried strips with sweet honey mustard dipping sauce that sat out way too long? Haha! I know I’m not the only weirdo that craves the crap food we all ate in our 20’s with no consequences. Well now my body will hate me for days if I tried to eat that so I came up with a solution to satisfy my craving minus all the fat greasy mess.

This is a pretty basic crusted chicken recipe but for a bit of a kick I added about 1 tablespoon of good old classic yellow mustard to the eggs and whisked it all together. Starting with the flour dredge, on to the eggs, and then the panko bread crumbs. I cooked in the air fryer for 15 minutes, flipped and 12-15 more. It was a perfect crunch with juicy, tender breast inside. I highly suggest flattening the breasts to make it a thin even cooking process and to avoid the breading from burning.

Now the star of the show is the sauce and I love a good honey mustard. Here I combined equal parts Dijon with honey. If you don’t like it too sweet, you can pull back on the honey or add more cayenne BUT I think the sauce is perfect as is.

Equipment

Ingredients

  • 3 chicken breasts, cut in half and flattened thin
  • 1/2 cup flour
  • 2 eggs
  • 1 tbsp. classic yellow mustard
  • salt, pepper, and paprika season to likening
  • 1 box panko bread crumbs

Honey Mustard

  • 1/4 cup mayonnaise
  • 2 tbsp. Dijon mustard
  • 1/4 cup honey
  • 1 tsp lemon juice
  • 1/4 tsp cayenne pepper

Instructions

  • Season the chicken breasts with salt, pepper, and paprika evenly and on both sides.
  • In a shallow bowl add the flour, to the second bowl the eggs and yellow mustard. Whisk. Last bowl fill with the bread crumbs
  • Dip the chicken one at a time in the flour mix, shake off the excess, then into the egg, and last the breading. Press the breading into the tender to cover it evenly. Move to a tray or plate. Continue with all the tenders and pop in the fridge for 10-20 minutes.
  • When ready to cook set the Air fryer to 400° In the air fryer add a couple breasts at a time but do not layer .Air-fry for 15 minutes, then flip and continue cooking 12-15 minutes more. Move to a cutting board or platter, cover with foil. Continue air frying the rest.
  • While you they are cooking mix all the honey mustard ingredients together until smooth.
  • I like to slice the chicken into small strips and pour the sauce over. It looks fancier and well, I like fancy!
