I love to use this salad as a side or for a delicious lunch. It works well with chicken breast too.
Ingredients
- 1 cup cavatappi or any pasta of your choice
- 1 ½ cups iceberg lettuce, chopped
- ½ cup red onion, finely chopped
- 1 cucumber sliced thin, and chopped
- 1 Roma tomato, chopped
- 1 cup of crumbled feta cheese
- Greek dressing (any kind you want)
Instructions
Step 1: Cook the Pasta
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente.
Drain and run the pasta under cold water. Set aside.
Step 2: Mix Pasta and Dressing
Add lettuce, cucumber, tomato, onion, feta, and pasta into a large bowl. Add as much dressing as you’d like. Toss gently to coat.
