This is the perfect pasta for hot summer nights. It is packed with so much flavor, marinated cherry tomatoes, fresh basil, and shaved parmesan cheese. 

The best part of this dish is the only cooking involved is boiling spaghetti noodles for 8 minutes until al dente. The cherry tomatoes are mixed together with fresh parsley, fresh garlic, extra olive oil, red wine vinegar, flaky sea salt, black pepper, and red pepper flakes. marinated tomatoes

After mixed it is refrigerated for 30 minutes – 4 hours. This will break down some of the acidity and give SO much flavor to the tomato mix. 

The noodles are tossed together with ricotta, parmesan cheese, topped with the marinated tomatoes, and fresh chiffonade basil.

Marinated Tomato Pasta with Fresh Herbs

Ingredients

  • 2 cups cherry tomatoes, quartered.
  • 2 clovea garlic, minced.
  • 1/4 tsp red pepper flakes plus, more for garnish
  • 3 tbsp. extra virgin olive oil
  • 2 tbsp. red wine vinegar
  • 1/2 tsp flaky sea salt
  • 1/2 tsp fresh cracked pepper plus, more for garnish
  • spaghetti noodles, cooked to al dente.
  • 1/2 cup ricotta cheese
  • 1/4 cup shaved parmesan cheese
  • 1 tsp fresh parsley, chopped.
  • 2 tbsp. fresh basil, chiffonade.

Instructions

Marinated tomatoes

  • In a bowl add 2 cups of quartered cherry tomatoes, 2 cloves of minced garlic, 1/4 tsp red pepper flakes, 3 tbsp. extra virgin olive oil, 2 tbsp red wine vinegar, 1/2 tsp flaky sea salt, 1 tsp minced parsley, and 1/2 tsp fresh cracked black pepper.
    Mix until combined, cover, and refrigerate for 30 minutes to 4 hours.
  • When you are ready for dinner, boil the spaghetti noodle in a large pot of salted water. Cook for 8 minutes or until al dente. Reserve 1/4 cup of the pasta water.
  • Toss the pasta, reserved water, ricotta cheese, and 1/4 cup of shaved parmesan cheese together.
  • Stir until melted.
  • Transfer to pasta dishes and top with marinated tomatoes. Garnish with fresh basil, some shaved parmesan cheese, a sprinkle of red pepper flakes, and fresh cracked pepper.
