Portland Cider Company is local to where I live and always has the best ciders! This flavor is seasonal so get it while you can. Any tropical cider would make a good substitute, but I highly recommend trying this flavor even on its own. Chilled on a hot summer day- does it get any better?!

Teriyaki Cocktail Meatballs
Ingredients:
Meatballs
- 1lb grass-fed ground beef
- ½ cup panko breadcrumbs
- 2 cloves garlic, minced
- 1 egg
- ¾ tbsp oyster sauce
- 1 green onion, chopped
- ½ tsp ginger paste
- ½ tsp salt
- ½ tsp pepper
Sauce
- 1 cup of Portland Cider Co. Passion Orange Guava Cider
- ¾ cup soy sauce
- ½ cup brown sugar, packed
- 2 tablespoons rice vinegar
- 3 cloves garlic, minced
- 1 tablespoon sesame oil
- ½ teaspoon ginger paste
- 3 tablespoons cornstarch
- ½ teaspoon pepper
- Sliced green onions for garnish (optional)
- Tropical toothpicks for serving (optional)
Instructions:
Meatballs:
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Add all meatball ingredients in a large bowl. Mix until all ingredients are well combined.
- Use a tablespoon or a small cookie scoop to form the mixture into meatballs, placing them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and evenly browned. Set aside until the sauce is ready.
Prepare the sauce and Serving:
- In a medium saucepan, combine all the sauce ingredients.
- Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for about 5 minutes to allow the flavors to meld.
- Stir until the sauce has thickened to your desired consistency. Add more cider if needed to thin the sauce
- Once the meatballs are cooked, transfer them to the saucepan with prepared sauce.
- Gently toss to ensure each meatball is evenly coated with the sauce.
- Serve the teriyaki meatballs hot, garnished with sliced green onions and remaining pineapple slices from the cocktail recipe.
- Add tropical toothpicks when serving as an appetizer for easy snacking.
Passion Orange Guava Mojito
Ingredients:
- 1 cup passion orange and guava cider
- 2 tablespoons fresh lime juice
- 1 tablespoon simple syrup
- 6-8 fresh mint leaves
- 2 ounces white rum
- Ice cubes
- Mint sprigs for garnish
- 6 pineapple rings/slices
Instructions:
 Pineapple
- Preheat a griddle or BBQ to medium heat.
- Place pineapple slices in the griddle and cook until golden brown.
- Flip and brown the other side. Set aside.
·Making the Cocktail
- In a glass or shaker, muddle the mint leaves and 1 pineapple ring with simple syrup to release the mint’s flavor.
- Add the lime, white rum and Portland Cider Co. Passion Orange Guava Cider to the glass.
- Shake or stir until well combined.
- Fill a glass with ice cubes.
- Garnish with pineapple and mint sprigs.
